I feel like a more useful defense for that type of attack would be to shorten the distance. But then again I'm the type of guy where if I was in a fight I'd just pick you up and throw you through something head-first. Dammit ECW. Hahaha

Stuffing a kick is a very effective defense. The power behind any martial arts kick is that it hits your opponent at the proper point in the motion when your leg is finished catching up with the rest of your body. Any time before that and you lose your power.
The difficult part is timing it.... which is 10x more difficult when you're caught off guard like that.
