I'm putting a system together soon. I'm getting either an intel core duo processor, or one of the Athalon 64 X2. What operating system would I want: XP pro, or the XP pro x64 version? They're the same price, do I need the x64 version to run with these processors?

if you are running a x64, get the 64-bit version.

I keep hearing that XP 64 has very poor driver support though.

That was a definite fact even months after it came out. That's why I never made the switch. I'm not too sure about now, though. I wonder if it's any better.
